    Similar to how I do it, but I usually run the bones in the pressure cooker for four hours alone (after roasting, with vinegar), up to two runs of four (for maximum extraction), then another run with all the aromatics. Takes a lot longer and you end up with a darker broth, always gels. Is fantastic.

    Looking great as always! Would you consider possibly making Jjappaguri (ramdon) from the movie Parasite? I'm curious to your take on this dish! It's been a recent trending dish in South Korea because it's basically stir fried instant noodles served with sirloin steak, and its ironic symbolism in the movie, as Korean domestic beef is super expensive while the ramyun (ramen) is cheap.
