    This comment might get lost in the sea of positive praise, but please put more research into your educational videos. 1. Never vacuum seal raw garlic. It can actually cause ballooning in the bag. Botulism also doesn’t die at that low a temp. 2. The principle of meats reaching a higher temperature when you let them rest only applies to a higher input of energy. Sous vide is the same color all the way through because whatever temp you choose to cook it at is the final interior temp. 3.

    You should really be pasteurizing your flour along with your eggs for rae cookie dough. Flour is very minimally processed/cleaned and can carry lot of potentially harmful bacteria

    Just did some Conecuh sausage sous vide (160 f for 2 hs) and finished with a Benzomatic TS800 torch....incredible. Steaks are comparable with $60 steaks at the finest steakhouses....and that's with Choice instead of Prime cuts. Defiintely season BEFORE you vacuum seal the meat on steaks and chops. Using a torch outside is preferable to searing inside with cast iron....unless you want a house that smells like smoke for a week. The results are very similar...trust me.

    You're telling me that raw eggs aren't safe to eat? I mean I knew about raw chicken, but no one ever mentioned raw eggs to me before..... I've made all sorts of things with raw eggs in them before and never had a problem. (I've since googled it. In the UK raw eggs are safe when the egg has a red stamp on it which signifies some sort of special method by which they are farmed.)

    I tried sous vid at a restaurant. 1st is the appearance which i know is cook but it look raw. 2nd is texture, Its like eating raw meat, i like meat to taste and feel like cook meat. 3rd is that fat is not melt in your mouth, its hard as hell. I HIGHLY don't recommend sous vid! It is a hassle without the reward.

    Hey Babish! When my boyfriend and I sous vide things, we top our water bath with a bunch of ping pong balls (creates a little ball pit on the surface...not for playing in) to help re-condense the water back into the bath to save from having to add water during the process and keep a more even temperature. Is this useless or genius?

    Hi, I love your channel. One thing I noticed is that while the sous vide makes the eggs safe to eat, it doesn't necessarily make the flour safe to eat. Flour isn't necessarily safe to eat without cooking... in 2016 there was an e. coli outbreak which was flour based.
